This morning some of the residents created a lovely treat. Yummy Lemon tarts.
If you would like to try these at home the recipe is below
One packet of Anzac Biscuits (Unibix because they are Australian made and owned)
400g cream cheese
3 Tbs castor sugar
200g lemon butter (we used homemade)
Coconut for topping
Soften the cream cheese, about 1 minute in the microwave. Add cream cheese, sugar and lemon to a mixing bowl and beat.
Soften the biscuits in microwave for 40 seconds or until soft and pliable. Press into shallow patty pan tray to form a hollow in the centre.
Scoop lemon cheese filling into bases to desired level.
Top with coconut.
Leave to set in fridge for an hour.
